8 typing tips for iPad & iPhone (aka "so THAT's where the apostrophe hides")

I can't believe I've had an iOS device for this long without knowing about some of these intuitive keyboard shortcuts. I always hated the fact that the iOS QWERTY keyboard has no apostrophe or quotation mark - turns out it does have one, it's just hidden. See tip #5.
I can't get #8 to work. Maybe a tip for iOS 5 doesn't now work in iOS 6.
