A good introductory text to get students to engage with copyright in terms of the inevitably intertextual practice of composition would be the NFB documentary RiP: A Remix Mainfesto (which can be viewed free online). Maybe also have a look at Marcus Boon's In Praise of Copying, Lawrence Lessig's Free Culture, or James Boyle's The Public Domain -- all free e-books.
Lunenfeld's book sounds interesting. Will check it out.
